Furthermore even if they survived, they would grow in the liquid/ high moisture beverage or food resulting in spoilage. Probiotic foods and beverages are therefore largely restricted to short shelf life refrigerated products.
However probiotics are fragile and are killed by the high temperatures used in food, beverage and gummy manufacture to ensure long shelf life.

In this trial Micro Encapsulated Bif lactis was added to a milk drink at a rate of 1.3*10⁶cfu/ml and the mix UHT treated at 140°C for 3 seconds.
The above graph demonstrates:
- Survival of micro encapsulated probiotics post UHT treatment
- Micro encapsulated probiotics remain intact and viable through 5 months storage at ambient temperature
In a similar trial Micro Encapsulated L Rhamnosus was added to a Kombucha at a rate of 1*10⁹cfu/serving and following pasteurisation at 66°C for 10 minutes the probiotics remained alive throughout an 11 month storage period at ambient temperature.

Pectin gummies were fortified with 1.5 billion CFU of microencapsulated Lactobacillus Rhamnosus.
And then subject to heat treatment of 93.5°C for 2 minutes and cooling for 45 minutes.
With the following results:
- At the end of the 6 month trial 77.3% of the added Lactobacillus Rhamnosus remained alive.
- Additional shelf life trials at ambient temperature using microencapsulated Lactobacillus Rhamnosus in gummies demonstrate survival of the probiotics for 17 months post manufacturing.
